Local cook to appear on Kathy Lee & Hoda Show

CROSSVILLE — Cumberland County resident and author Gale Compton will be appearing on the Kathy Lee & Hoda Show, an extension of NBC's Today show at 9 a.m. (CDT) this Wednesday, April 10.

Compton said the show announced last week that they were having a Healthy Lasagna Cook-Off and asked for recipe submissions.

"I submitted a recipe and they notified me (Monday) that it was selected, along with two other entries," Compton said.

Compton is a home cook who creates healthy recipes and fitness workouts for her healthy living blog,

"I became interested in eating and creating healthy, clean recipes after a second breast cancer diagnosis over five years ago. I also became involved in fitness, which includes running in half marathons and weight training," Compton said.

Compton has a large following on Facebook of those who are also interested in preparing healthy meals for their families. 

"Today, my main purpose and focus in life is about encouraging others, especially women, to take their health seriously and begin eating more whole foods and fewer processed foods, and making exercise a lifestyle," Compton said.

Compton was scheduled to fly to NYC Tuesday morning to prepare for the show. 

Compton is the author of two books, Skinny Ms. Slow Cooker and Skinny Ms. Superfoods.
