A sweet exchange

CROSSVILLE — C really is for cookie! Nothing says Christmas is near like a baker’s dozen or two brought in for a cookie exchange. The annual cookie exchange, sponsored by Lake Tansi Recreation Committee, was held on Thursday, Dec. 19 at the Thunderbird Recreation Center. With lunch, cookies, and a raffle for Christmas novelties and poinsettias, it was difficult not to take away an abundance of Christmas spirit, as well as a full stomach.

Several tables heavy-laden with dozens and dozens of homemade cookies ordinarily would have made eating lunch a chore. But with tender pulled pork sandwiches, baked beans, Hawaiian slaw, and potato salad, it was a pleasant task to offset all the sugar.

After lunch, tickets were drawn for the Christmas raffle. Poinsettias, porcelain Santa figurines, candles and more went home to brighten cookie exchangers’ homes. Everyone went home with a little something and, of course, cookies.

Loyal recreations volunteer, Sandy Griffy, not only donated the poinsettias for the raffle, but she also brought a plateful of her coveted Potato Chip Cookies. Griffy claims she isn’t a baker or much of a cookie person but her salty-sweet confections suggest otherwise.

“This is one of the recipes I have that is one of my absolute favorites because it is so easy and it makes a heap of cookies,” said Griffy. Her Potato Chip Cookies had the consistency of a Danish wedding cookie but were even more delicious.

Plates and plates of mixed-matched cookies, from butterscotch squares and chocolate with white chocolate chips to peanut butter kisses and potato chip cookies, were taken home. Cookies, of all shapes, sizes, tastes, and delights, putting Mrs. Claus’ recipes to shame.

“We had a great time from the Christmas music to the cookies. Every activity we have is so much fun,” said Ken Soncratz, Recreation Committee Director.

With nothing left for Santa but the crumbs, it is evident that Lake Tansi knows a thing or two about how to exchange cookies. The cookies and the company were a welcome treat and that is why LT eats Christmas cookies all year long.
