Drucilla's Little Helpers: Strawberry cake

May 20, 2008 08:57 am

I hope all the mothers had an enjoyable Mother's Day. We had a delicious meal (no, George didn't cook it) and a good time was had by all. On Saturday we celebrated our granddaughter Sierra's eighth birthday. On the day she was born, George had a heart attack. George woke me up on that Sunday morning, May 7, and said, "I think I need to go the hospital." Denice woke Greg up and said, "I think I need to go the hospital." They got to the hospital before we did. Sierra was born around 5 p.m. and on Tuesday mother and baby went home. On Tuesday, George had heart surgery. It is a birthday he will never forget. I told him that he didn't need to get that excited over having another grandchild.
Last Thursday night I heard a familiar sound and I went out on the porch to listen and there he was. Every year about this time, a whippoorwill comes and starts saying "whippoorwill" and then it turns cold. I think he is saying "getting cold." My mother used to say we were having whippoorwill winter. The blackberries are blooming also so it must be blackberry winter also. This should be the last little cool spell. I hope so. Sierra and Haley are both playing ball so it needs to warm up a bit.
Speaking of berries, I had some very good strawberries over the weekend. Someone asked me to repeat the strawberry cake recipe because they had lost theirs. When you get it made, just call me and I will bring the coffee.
Scrumptious Strawberry Cake
1 box yellow cake mix (with pudding in it)
4 eggs
1 cup milk
1 (12 oz.) Cool Whip
1 8 oz. package cream cheese
1/2 cup granulated sugar
1/2 cup confectioner's sugar
1 quart sliced strawberries
1 pound jar or package strawberry glaze
In large mixing bowl, combine cake mix, eggs and milk. Mix according to directions on box. Pour into 2 greased 9-inch cake pans. Bake according to package directions. Cool cakes; slice each layer in half to make 4 layers. Mix cream cheese and sugars together. Fold in cool whip. Beat until creamy. Combine strawberries and strawberry glaze. Stack cake by spreading cream cheese filling over cake. Top with strawberry mixture. Repeat with next three layers. Frost top layer and sides and spoon strawberry mixture on top of cake. Refrigerate. Enjoy!
Don't forget if you graduated from Monterey High School in 1964 or were in our class, could you send me your e-mail address. We are planning another get-to-gather and would like to get in touch.
Any questions or recipes to share, you may call me at (931) 839-2313 or e-mail me at drucilla1@frontiernet.net. Have a blessed week. Watch out for those whippoorwills.
